purple berry smoothie with coconut and pepitas
Ingredients:
1 1/3 cup frozen mixed berries
Banana, frozen
1 ½ cups unsweetened soy milk
½ cup plain low fat kefir
8 large strawberries (about 1 cup)
2 tablespoons pumpkin seeds
2 tablespoons shredded coconut
Instructions:
1. Add berries, banana, soy milk, kefir, and 6 of the strawberries to a blender and blend well until smooth.
2. Dice the other 2 strawberries into small pieces.
3. Pour smoothie into a bowl. Top with diced strawberries, pumpkin seeds, and coconut.
