oven roasted salmon with zoodles and burrata

Ingredients:

1 lb of salmon, cut into 4 pieces

½ a box (8 oz) whole wheat spaghetti

2 large zucchini, spiralized or sliced into ribbons

4 oz burrata (1 burrata ball from trader joe's)

2 tablespoon olive oil

1 cup sun-dried tomatoes, packed in oil

Salt, pepper, and red pepper flakes to taste

Instructions:

1.       Pre-heat oven to 400F. Rub salmon with olive oil, salt, and pepper. Bake for 10 minutes.

2.       While salmon is cooking, boil water and start cooking pasta according to package directions.

3.       Spiralize zucchini with a spiralizer-- I use the Paderno 4 blade Spiralizer. Toss the spiralized zucchini in a pan with olive oil over medium high heat until soft (probably 4-5 minutes).

4.       Add the cooked pasta, sun dried tomatoes, salt and pepper, and mix around.

5.       Divide into bowls and top with roasted salmon and burrata. Sprinkle with red pepper flakes.
