the best breakfast sandwich you will ever eat
I’ve made several renditions of this sandwich ever since creating the recipe and it is always SO good. Honestly better than most restaurant breakfast sandwiches, plus comes together quick and healthy too. It’s full of protein and heart healthy fats from the salmon and egg. I recommend using a high fiber bread with at least 3 grams of fiber per slice. Plus a serving of greens is always a good idea.
Ingredients:
2 slices of whole grain bread
1-2 handfuls of greens, such as baby spinach or kale
1 pasture raised egg
2 oz smoked salmon
Sun dried tomato pesto*
*in my first recipe, i used alessi sun dried tomato pesto. when i ran out, i made my own version by blending sun dried tomatoes (in oil) with almonds, garlic, salt, and pepper. you can also use regular green pesto, or any other spread that you like.
Instructions:
Saute greens in a little bit of olive oil. Set side.
Spray pan with oil again and crack your egg over-easy style. I recommend breaking the yolk towards the end so that it’s less messy to eat.
Toast the bread. Assemble the sandwiches by spreading pesto on each side of the bread, then layering greens, egg, an salmon. Enjoy!
