savory green oatmeal bowl
Ingredients:
1/2 cup oats
1/2 small avocado
1/2 cup unsweetened soy milk
1 cup arugula or other greens
1/2 cup broccoli, broccolini, or brussel sprout stalks (great way to reduce food waste!)
1 teaspoon garlic powder
1 tablespoon nutritional yeast
salt and pepper to taste
1 large egg, I use Vital Farms pasture-raised
1/4 cup microgreens for topping, I used BrightFresh microgreens pea shoots and kale
Instructions:
1. Purée vegetable stalks, arugula, avocado, soy milk, nutritional yeast, and garlic powder in a food processor or blender (I use the Magic Bullet).
2. In a small sauce pan, bring one cup of water to a boil. Pour in the oats, reduce heat, and simmer for 5 minutes.
3. While the oats cook, begin to soft boil your egg.
4. Turn off the heat on the oatmeal, stir in the puréed mixture, and season with salt and pepper to taste. Transfer to a bowl and top with the microgreens and egg (peeled).
