autumn apple pecan and lentil salad
Ingredients:
4 cups baby spinach
2 cup mixed greens
½ cup cherry tomatoes, cut in half
½ cup shredded carrots
2/3 cup pre-cooked lentils
¼ cup red onion, sliced (leave this out if you don’t like raw onion)
½ of an apple, sliced
1 oz (1/4 cup) pecans
2 oz (1/2 cup) blue cheese
Apple cider vinaigrette:
2 tablespoons olive oil
2 tablespoons apple cider vinegar
2 teaspoons dijon mustard
2 teaspoons honey
Salt and pepper to taste
Instructions:
1. Blend dressing ingredients together and set aside.
2. Assemble your salads by starting the greens, then lentils, then vegetables, apple, pecans, and blue cheese.
3. Add dressing when you’re ready to eat and mix well. Serves 2-ish.
